Palm oil, palm olein, and palm stearin are derivatives of palm oil, each with distinct characteristics:

  1. Palm Oil: This is the natural, unrefined product extracted from the fruit of the oil palm. It’s semi-solid at room temperature and has a balanced composition of unsaturated and saturated fatty acids. It’s reddish due to high beta-carotene content.

  2. Palm Olein: This is the liquid fraction obtained by fractionation of palm oil. It’s clearer and more liquid than pure palm oil, making it ideal for cooking and frying due to its stability at high temperatures.

  3. Palm Stearin: This is the solid fraction of palm oil. It’s richer in saturated fats and is used in products that require a higher melting point, like margarine and shortening. Palm stearin is also used in non-food industries for making soaps and candles.
